COOKING IN THE DARK WITH COCHRAN & CHRISTIE

Christie and I hope you enjoyed our snack recipe from last Saturday.  If you tried it, let us know how you liked it.  Our recipe today has been a long-time favorite.  We started making this when we lived in Louisiana, so you know it's a little spicy!  The good thing about this recipe is you can make it MILD or WILD.  Here's the basic recipe below:

TACO RICE
1 lb. ground beef (93% lean)
1 pkg. taco seasoning mix
1 14-oz. can diced tomatoes
1 cup rice
2 cups water
1/2 tsp. black pepper
8 oz. shredded cheese
Tortilla chips
Brown ground beef; drain off any fat.  Turn heat to low and stir in taco seasoning mix.  Add tomatoes and juice, rice, water, and pepper.  Cover and cook on a low simmer until rice is cooked and water is absorbed (about 25 minutes), stirring occasionally.  Salt to taste (take into account the saltiness of your cheese and chips).  Add cheese and stir until blended.   Serve with tortilla chips. 
*You can modify this recipe by sauteing onions and green or red peppers with the ground beef.  You can also add additional spices, jalapenos, green chiles, mild or hot cheese, etc.
